Breakfast Brunch: Apple Fritters




Growing up as a child, one of my favorite breakfast feasts was apple fritters. I remember having them on birthday sleepover mornings with my friends, and during the fall season (after a trip to the all-time greatest place: apple hill).

So, for Christmas this year, at our after-sleep-over brunch party on Christmas morning, I whipped up a batch to share. I tried to mix half whole wheat flour white white flour (my attempt at healthy... hahaha), but it didn't turn out as good. AND make sure you cut the apples small-small!

Here's the recipe from Mom:

  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp sugar
  • 1/4 tsp. cinnamon (I also put more!)
  • 1/4 tsp. nutmeg
  • 1 egg, beaten,
  • 1/3 cup milk
  • 1 Tbsp oil
  • 1 Tbsp lemon juice
  • 2 large apples (sliced, cored, peeled)
Making them is easy! Heat oil to 350 degrees (not sure how you know that it's that hot, but when its bubbling a little is fine). Mix the dry ingredients in a small bowl. Beat egg slightly + milk and stir this liquid mixture into the dry ingredients. Beat into a smooth batter. Then add lemon juice + fruit, and drop into the oil. Cook 3-4 at a time. Fry until delicate (either deep fry or pan fry), about 5 minutes. Drain on paper towel and roll in sugar.

Enjoy with friends & then go for a walk perhaps... xx
