Peel of 2 large navel oranges
1/2 cup sugar
1/4 cup water
granulated sugar or chocolate coating
Cut the peel into strips about 1/2" x 2" long. Cover with cold water; bring to a boil, Drain, Repeat, cooking 4-5 times until skins are quite soft. Drain and put strips aside. Make syrup of the sugar, plus 1/4 cup of the orange water. Boil softened peel in the syrup until syrup is absorbed. Cool on parchment paper. Roll in granulated sugar. For chocolate-coated orange peel, allow to dry without rolling in sugar, then dip in melted semi-sweet chocolate.
I doubled the recipe. Just a thought - try lemons or limes.....
